1. Always a favourite: Dal Zotto NV Pucino Prosecco
Dal Zotto NV Pucino Prosecco
“The sparkling that started the entire Australian prosecco movement, Pucino NV keeps showing the way with both its zest for life and depth of flavour concentration. Citrus blossom perfume is accompanied by lemon zest, quince, apple and grapefruit. Akin to a mouthful of lemon sorbet, the flavours pop with energy and brightness while running deep and long across the palate. A wine to put a smile on your face.”
PALATE
Prosecco is extra dry with loads of fruity aromas mainly green apple, honeydew melon, pear and honeysuckle.
NOSE
Aromatics – Citrus, lemon, minerals and Grapefruit pith. Fresh and vibrant.
MATURATION
Five months in stainless steel.

2. Col Fondo Prosecco 2022
Col Fondo Prosecco 2022
“Col Fondo Pucino Prosecco undergoes secondary fermentation in bottle and isn’t disgorged. The flavoursome leesy sediment dances on the bottom, hence ‘col fondo’, literally meaning ‘from the bottom’. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.”
PALATE
Col Fondo Prosecco is dry with loads of fruity aromas mainly green apple, brioche, pear, ginger and cream cheese. Serve it cold and perhaps making the most of the yeast by giving it a gentle roll before serving. It has lovely lingering savoury elements to it and that extra texture adds depth to the wine.
NOSE
Aromatics – Ginger, lemon, minerals and Grapefruit pith. Fresh and vibrant.
MATURATION
5 months in Stainless steel and post-secondary ferment 9 to 12 months on lees.

3. Dal Zotto Cabernet Merlot 2022
Dal Zotto Cabernet Merlot 2022
“A smooth and mellow cooler-climate style red with a gently leafy layer across a core of cassis and blueberry fruits with fine oak spice. It’s smooth and lengthy with nicely polished tannins.”
PALATE
This Cabernet/Merlot is light to medium-bodied red wine that tips towards higher levels of mouth-watering acidity and tighter tannins. It is fruit forward and round, exhibits nuances of blackberry, dark cherry, bell pepper and herbs.
NOSE
Aromatics – Blackberry, Dark Cherry, Bell Pepper and plum.
MATURATION
11 months in 15% new oak and 85% old French oak.

4. Dal Zotto Pinot Grigio 2025

“This Pinot Grigio is a crisp and elegant white wine showcasing the freshness of the King Valley.
Pale straw in colour with lime green hues, it opens with bright aromatics of lemon tart, wildflowers, pear, green apple, and lime.”
PALATE
The wine express subtle floral, with fresh pear, citrus and honey flavours encased by rich stonefruit textures.
NOSE
Aromatics – Apple, Citrus blossom, Honeysuckle. Fresh and vibrant.

Three months in Stainless steel

5. Dal Zotto Garganega 2022

“The garganega grape hails from the hillside vineyards above Soave in the Veneto region of Italy. How apt that it is also well-suited to the cool climate and hills of the King Valley. Here, light zestiness and acid crunch mix well with the grape’s preserved lemon savouriness, citrus, green almond bite and background chervil herbals. Bring on the seafood and watch it excite.”
Garganega is a white wine, made from the Italian Garganega grape. It’s been a while since we have had one of favourite wines back on the list and we are very happy with this vintage. With rich fruit characters of pineapple, melon and peach balanced by lime citrussy-ness and finishing long with a delicate creamy mouthfeel, it would be perfect for a long lunch.
FLAVOR PROFILE: Savory, zesty, with preserved lemon, citrus, green almond, white peach, and mineral notes.
ACIDITY: High and refreshing.
MOUTHFEEL: A combination of rich and fatty textures, sometimes described as textural or chalky.
PAIRING: Pairs well with seafood.

6. Dal Zotto Sangiovese 2023

“The palate is light to medium-bodied yet structured, with mouth-watering acidity, supple tannins, and layers of plum, cherry, tomato, leather, baking spice, and earthy truffle.
Approachable now yet cellar-worthy until 2031, it shines with hearty bean soup, beef ragu, pecorino, or rich gnocchi in sage butter.”
Dal Zotto Sangiovese 2023, grown in Victoria’s King Valley, is matured for eight months in French oak (15% new, 85% seasoned) to enhance texture and depth.
Bright crimson in colour, it opens with lifted aromatics of cherry, red plum, strawberry, fig, and dried roses, complemented by savoury hints of oregano and thyme.
The palate is light to medium-bodied yet structured, with mouth-watering acidity, supple tannins, and layers of plum, cherry, tomato, leather, baking spice, and earthy truffle.

7. Dal Zotto Arneis 2022

“There are some top ’22 whites being released, and this is one of them. Offering a big mouthful of fine, summery flavours and captures a sense of the region with its lifted perfume of wildflowers, white florals, apple blossom, red apple and pear. Works in texture across the palate with just a splash of lemon barley sweetness. A great all-rounder.”
Arneis is a delicate refreshing white wine with striking floral perfume, ours has plenty of sweet-scented almond and citrus blossom on the nose, along with bright pear and nashi fruit aromas.
The palate has a tight, bright and crunchy style to it, really neat and crisp with a lingering honeydew-flavoured finish.
The acidity is well balanced with good length of fruit flavours.
